- Instant yeast6 g
- Salt10 g
- Olive oil15 g
Instructions

Mix everything into a dough and knead 8 minutes until smooth and elastic.

Cover and rise 1–1.5 hours until doubled.

Set a baking steel or an upside-down baking sheet on the middle rack and preheat to 500°F for at least 30 minutes.

Divide into 8 balls, cover, and rest 20 minutes so they roll out without fighting back.

Roll each ball to a 7-inch round about 1/4 inch thick. Even thickness is what makes the pocket.

Bake 1–2 at a time directly on the hot surface, 2–3 minutes, until they balloon. Stack under a clean towel so they stay soft.
