Whisk flour, yeast, and salt. Add water and mix into a shaggy dough.

Cover and let rise 12–18 hours at room temperature until bubbly and doubled.

Tip out, fold the edges to the center, shape into a round, cover and rest 30 minutes.

Preheat Dutch oven to 475°F. Drop in dough seam-side down, cover and bake 30 min.
