Ingredients

  • Whole wheat flour350 g
  • Bread flour150 g
  • Water350 g
  • Honey30 g
  • Olive oil15 g
  • Instant yeast5 g
  • Salt9 g

Instructions

    Mix all ingredients in a stand mixer with dough hook for 6–8 minutes until smooth.

    First rise 1–1.5 hours covered until doubled.

  3. 3

    Shape into a log, place in a greased 9x5 loaf pan.

  4. 4

    Second rise 45–60 minutes until 1 inch above pan rim.

  5. 5

    Bake at 375°F for 35–40 minutes until internal temp is 200°F.
